Fennel & Prawn salad with crispy Prosciutto

Imagine surf and turf but in its lightest and tangiest form. I'm not talking a mountain of steak and lobster here, I'm referring to a colourful, crispy, lemony collaboration between prosciutto and king prawns. In 15 minutes. I've mentioned this before, but it's my ongoing desire to make healthy food taste indulgent (and look jazzy). If you feel like you're eating a plate of rabbit food, it's not exactly going to fill you up and leave you satisfied is it?

Cottage style pea & bacon soup

I had the pleasure of staying in a gorgeous cottage in Lustleigh, Devon this weekend and spent the majority of the time warming my feet by a roaring fire.

Rösti - two ways

1. Rösti with smoked salmon, avocado & dill crème fraîche

2. Rösti cakes with bacon, fried egg & roasted cherry tomatoes

Having recently visited Bad Wiessee, a picturesque Bavarian town at the foot of the Alps, I have developed a keen interest in not only hearty Bavarian cuisine, but also an incredibly simple and delicious Alpine favourite, rösti. As Felicity Cloake confirms here, it is not as easy as you might think to track down a universal recipe for this golden, crispy Swiss cuisine.

Bacon & Chocolate bread pudding

So I often get asked about my love for bacon, and for my lack of bacon recipes on my bacon-named blog. I love bacon, of course. I don't want to alarm anyone, but I also love bread. And cheese. And vegetables (I know), hence my range of incredibly diverse recipe's on the blog. One of the things I love most about cooking is how much you can achieve with just a little experimenting, and of course devouring the delicious results. This time, I wanted to bring back the bacon a bit. But not just bacon in bacony recipes. I wanted to put bacon somewhere a bit different. In bread pudding.

Roasted salmon, proscuitto & vegetables with caper and basil mayonnaise

I'm going to be straightforward about this one. If you're looking for something delicious, healthy, easy, crispy, flavorful, darn even gluten free - then you have your winner here.

This is a one tray dish. And you cook it for 10 minutes.

Smokey bacon and kale pasta

Every year I'm excited for winter: Christmas, snow (I know, hopes and dreams smashed annually), mulled wine (would drink it all year round) and other general winter fun. However, as soon as the new year breaks and I can't quite believe that the days are getting longer and lighter, I'm still waiting for snow and I'm incredibly bored of hat/glove/scarf admin, I find spring just can't come fast enough. I'm ready for springtime.

Artichoke & Bacon Pasta bake

I can't even begin to tell you how delicious this is. I almost passed out when eating it. That good.

Crunchy Bacon & Blue Cheese Salad

This is one of those salads you eat when you need a health kick but you aren't quite ready to entirely sacrifice indulgence.

Parmesan Shortbread & Bacon Jam

'Tis the season to eat bacon jam. Actually there isn't a season when you shouldn't eat bacon jam. It should be eaten in every season and that's one of the many reasons why we love it so. The term 'jam' here should be taken with a large pinch of salt. Think part chutney, part relish, part jam.

The Ultimate Sourdough Toastie

There are too many words I want to put in the title of this one. Cheesy. Crispy. Toastie. Sourdough. Bacon. Crispy cheesy grilled toasted sandwich with avocado, bacon, mozzarella and SO MUCH DELICIOUSNESS. I have a feeling people might be intimidated.

Extra Cheesy Bacon Lasagna

I feel I have been letting you all down somewhat on the cheese front. Yes there has been cheese cropping up, poking its head politely round the door to with a meek 'hello'; but I want in-your-face, obnoxious, heart and soul of the party cheese. And bacon, obviously.

Bacon, Asparagus & Mozzarella Tart

I can't bring myself to say Flan. Even though this is, technically, a flan. It doesn't sound British enough and tart is just better. More fun.

Date with a Bacon Scone

So firstly I want to thank all those who said 'Rosie what the hell are you doing? Why haven't you posted on your blog? Idiot'. Thank you for your kind and inspiring words.

Bacony Beans

BACON! It finally features. OK so it's a side dish and the bacon takes more of a supporting role but you know, it's still bacon. I figured it was about time.
